Because after 10 years of orange, we're craving something new
For over a decade, summer evenings were synonymous with one thing: Aperol Spritz. The color, the clinking ice cubes, the slight bitterness mixed with bubbly prosecco – it was our go-to. But this year, something shifted. Maybe it’s the heat, maybe it’s just the itch for something different, but suddenly I found myself reaching for alternatives. And guess what? There’s a whole world of spritz-worthy drinks out there, just as refreshing, light and perfect for sunset sipping.
We’ve just returned from Ischia, a dreamy island in Southern Italy, and beyond the stunning beaches and lemon groves, it also brought a wave of drink inspiration. Bitter and sour notes with a hint of sweetness are exactly what my summer soul needed.
Here are six beautiful and easy to make drinks that are giving Aperol a well deserved summer break.
1. Sarti Spritz – the pink newcomer
A friend of mine recently recommended this one and I haven’t even tasted it yet, but I can already tell it’s going to be a new favorite. Made with Sarti Rosa, it’s a pink, slightly bitter aperitif that looks just as good as it sounds. Prosecco and soda bring the fizz and citrus slices add that extra summer sparkle.
How to make it:
– 5 cl Sarti Rosa
– 8 cl prosecco
– splash of soda
– orange slice and ice

2. Limoncello Spritz – a glass of sunshine
This was the drink in Ischia. We saw it on every menu and tasted quite a few versions during warm evenings by the sea. The lemony sweetness, combined with bubbles and mint, feels like a beach vacation in a glass.
How to make it:
– 5 cl limoncello
– 8 cl prosecco
– soda water
– lemon slice and mint leaves

3. Campari Spritz – bold and bittersweet
If you’re in the mood for something with more depth, Campari is the way to go. Stronger and more herbal than Aperol, it has this grown up charm I’ve really come to enjoy. Especially when paired with lots of ice and a twist of orange peel.
How to make it:
– 5 cl Campari
– 8 cl prosecco
– soda
– orange peel and ice

4. Lillet Vive – French chic in a glass
Light, floral and super refreshing. Lillet Blanc is a French aperitif that works beautifully with tonic or soda. Add strawberries and cucumber slices and it instantly becomes that kind of drink you serve when friends come over and never want to leave.
How to make it:
– 5 cl Lillet Blanc
– 10 cl tonic or soda
– fresh strawberries and cucumber

5. Hugo – the elderflower classic
We almost forgot about this one, right? Hugo has been around for years but still feels like a little garden party in a glass. The elderflower syrup gives it a lovely floral note, and with mint and lime it’s as refreshing as it gets.
How to make it:
– 2 cl elderflower syrup
– 10 cl prosecco
– soda water
– mint and lime slices

6. Fruity Prosecco – sweet and simple
Sometimes, less is more. One of my summer go tos is simply mixing prosecco with a splash of fruit juice. Peach, raspberry or even blood orange – it’s effortless, fun and always hits the spot. Plus it looks adorable with frozen berries or citrus wheels.
How to make it:
– 10 cl prosecco
– 4 cl fruit juice of your choice
– frozen berries or citrus slices

So there you go – six bubbly, easy and refreshing drinks to bring something new to your summer routine. Aperol, we love you, but we’re ready to play around a bit.
